A homemade chicken soup works wonders – a recipe to try at home.

For instance, when was the last time that you tasted a real chicken soup, without stock cubes or glutamate? A real honest to goodness chicken soup. It is well worth the effort as the taste just can´t compare, and did you also know that chicken soup is one of the best homemade remedies for fighting colds and sniffles. This is no mere housewives tale but has been scientifically proven. The body´s own white blood cells, specifically the neutrophil cells which are responsible for inflammatory reactions in the body, are inhibited.
Kitchen Chef Stefan has shared his original Schmelzhof chicken soup recipe. A slowly simmering pot of broth always has something soothing and comforting about it. Why don´t you try it out at home. It tastes best with Vermicelli or thinly sliced strips of pancake or how we call them here in Vorarlberg “flädle” or more commonly known as “a körige flädlesuppa”.

The Schmelzhof chicken soup recipe:

Ingredients

2 whole chickens
4 carrots
1 celeriac
1 stalk leek
2 parsley roots
300g ginger
2 onions
2 galangant roots
2 cloves garlic
Juniper berries, mustard seeds, pimento, bay leaf, whole black pepper corns
Small bunch of parsley, lovage, chervil

Directions:

Put all ingredients in a large stock pot, cover with cold water and bring to the boil. Simmer for 4 hours.
Pass the broth through a fine sieve and season with salt. Serve with thin noodles, vegetable strips, chives and finely sliced ginger
